Ingredients

    2 carrots (7.5" long) chopped
    1 Onion, diced (about 1.5 cups)
    2 Celery Stalks (11 - 12" long), chopped
    1 tsp salt
    1 clove of garlic, minced
    1 Bay Leaf
    4 cups water
    4 Tbsp bouillion (Veggie or Beef)
    4 cups (about 1 pkg of bagged) shredded cabbage
    1 tsp Celery Salt
    1 Can (796 ml) Stewed Tomatoes - no salt added
    1 Can (796 ml) Diced Tomatoes - no salt added
    1 tsp Black Pepper
    1 Pkg (340 grams) Yves Veggie Ground Round Original
    1 cup (dry) whole wheat noodles (elbow macaroni or other)

Directions

1. Peel and chop carrots, onions, and celery stalks into sizable chunks. Toss into frying pan with Salt and minced garlic and cook until softened (about 5 mins.)

Meanwhile...

2. In a large soup pot, add stewed & diced tomatoes, celery salt, black pepper, bay leaf, 4 cups of veggie broth (prepared), 1 pkg of pre-shredded cabbage. Add onions, celery & carrots from frying pan and bring to a boil for 5 mins.

Then...

3A. If Adding Noodles... (complete recipe is 170 cals per cup)
Remain at a boil, add noodles and then add pkg of veggie ground round. Boil for 10 more mins.

Or

3B. If Not Adding Noodles...(recipe is 115 cals per cup)
Add pkg of veggie ground round, turn heat down and let simmer for 10 more mins.
