Mandarin Orange Salad

Introduction

My sister-in-law came up with this recipe. I added a few other touches that our family enjoys. Other greens may be substituted as they are available: iceberg, red leaf, green leaf, butter lettuces, etc. My sister-in-law came up with this recipe. Ingredients

    2 C spinach, torn roughly
    4 C romaine lettuce, torn
    4 C organic baby spring salad mix
    1 small red onion, sliced into rings and separated
    11 oz can of mandarin oranges, well drained
    1/3 C slivered almonds
    4 Tbsp McCormick Salad Toppins, Garden Vegetable
    4 Tbsp Hormel Real Bacon, bacon bits
    1/2 C. Craisins
    1/2 C Kraft Light Done Right Red Wine Viniagrette

Directions

In a large salad bowl, layer the dry ingredients as listed. Pour dressing over salad just before serving. Croutons may be added to each serving (not included in calorie count).

If you are not planning to use all the salad at once, prepare all the ingredients ahead of time and store separately. Build individual servings as desired.

Great side dish with chicken, fish, or pork!
