Italian Chicken with Garlic and Lemon w/ Potatoes

Introduction

Tasty Chicken!!! Though the fat grams are deceiving due to not actually ingesting all the olive oil, just use it to cook with. Could also probably reduce or elimanate it, if you wanted. Ingredients

    3 medium potatoes, quartered
    3 bone in chicken breast, skinless
    1/2 cup oil
    2 tbsp 1/2 tsp white wine vinager
    1/2 cup lemon juice
    3 cloves garlic, minced
    1/4 onion, minced
    1 1/5 tsp dried oregano
    1 1/5 tsp dried parsley
    salt and pepper to taste

Directions

1.Preheat the oven to 350 degrees F (175 degrees C).
2.Arrange the chicken pieces in an enameled roasting pan. In a large skillet over medium high heat, fry the potatoes in oil until golden brown, then put them in the pan with the chicken.
3.Combine the vinegar, lemon juice, garlic, oregano, parsley, onion, oil (used to cook potatoes), salt and pepper and pour this mixture over the chicken and potatoes.
4.Bake in the preheated oven for 1 1/4 hours, basting the chicken and potatoes with the sauce mixture. Let rest for 5 minutes and serve hot.
