IntroductionI make this tasty banana bread every Christmas. It's excellent to serve to a crowd, or wrap up the mini loaves and give them away as gifts. 10 bananas, mashed
3/4 cup butter, creamed
6 cups flour
3 tsp. salt
1.5 cups sugar
1.5 cups brown sugar
3/4 cup low fat buttermilk
3 tsp. baking soda
1 tsp. baking powder
2 tsp. vanilla extract
1 cup chopped walnuts (optional)
In small bowl, stir together flour, salt, baking soda and baking powder.
In large bowl, cream butter. Add sugar, brown sugar and vanilla and mix until fluffy. Add eggs and buttermilk, mixing well. Add bananas.
Pour dry ingredients into wet ingredients and mix until just moistened. Add nuts.
For large loaves, bake at 350 degrees for approximately 1 hour, then reduce heat to 300 degrees and bake for another 30 minutes or until bread pulls away from the sides of the pan. For mini loaves, bake at 350 degrees for approximately 45 minutes.
Remove from pans and cool on racks.
