Beachy Southwest Chicken Stew

Introduction

I stole this recipe from another Sparker. Her recipe called for 1 cup of frozen corn, but to make it South Beach friendly, I omitted it.

Number of Servings: 8

Ingredients

    8 oz chicken breast
    1tsp olive oil
    1 medium onion (diced)
    3 cloves garlic (chopped fine)
    1 green pepper (diced)
    1 can of black beans (rinsed and drained)
    1 can of tomatoes w/ green chilis (Ro-Tel)
    1Tbs cumin

Directions

Add oil to skillet.
Add cut up chicken breast and lightly brown.
Add onions, garlic, and green peppers and cook until almost done.
Add in black beans and tomatoes.
Season w/ cumin.
Simmer about 20-30 minutes until flavors blend.
