Instead of corned beef and cabbage, try this slow cooker meal on St. Partrick's Day! Adapted from Fresh From the Vegetarian Slow Cooker by Robin Robertson


Number of Servings: 6

Ingredients

    Olive Oil, 1 tbsp
    Onions, 1 medium, diced
    Minced Garlic, 2 tbsp
    Red Skinned Potatoes, 5, cut in 8ths or so (half inch pieces)
    Baby Carrots, raw, 1 cup, cut in half
    Beans, red kidney, 1 cup
    Peas, frozen, 1/2 cup
    Boca Ground Burger, 1 1/2 cups
    Vegetable Broth, 4 cups
    Soy Sauce, 2 tbsp
    Rice Vinegar, 1 tbsp
    Parsley, Sage, Rosemary, Thyme, Salt and Pepper to taste

Directions

Saute the onions and garlic in the oil for about 5-10 minutes.

Put EVERYTHING in the slow cooker, and leave it on low for 8 hours.

Come home to a delicious, hearty, omnivore approved meal!
