Health Conscious Chili - Crockpot

Introduction

My teenage son raves about this chili, even though it is low fat, low sodium and high in fiber! My teenage son raves about this chili, even though it is low fat, low sodium and high in fiber!
Number of Servings: 6

Ingredients

    1 lb Ground Turkey
    1 can Tomato Paste (low sodium)
    2 tblsp Chili Powder
    2 tsp ground Cumin
    1 tsp Onion Powder
    1 tsp Garlic Powder
    1 Can Tomatoes with Chili Peppers
    4 Cups Chicken Broth (low sodium)
    1 Can Pinto Beans
    1 Onion, chopped
    1 Cup raw Pearl Barley

Directions

Brown the ground turkey in a non-stick skillet. When done, add the tomato paste and spices. Stir to blend.

In a crockpot, combine the chopped onion, tomatoes, broth, pinto beans and barley. Stir in the turkey mixture and stir well to distribute ingredients.

Cover and cook on low for 8 - 10 hours. The Barley will thicken the chili, adding lots of extra fiber. Using low sodium products will make this a very healthy dish that is also low in fat. It can be spiced up as desired with the addition of jalapeno peppers or picante sauce.
