This is from the South Beach diet and is a very healthy low calorie way to stay away from starchy potatoes and it tastes pretty darn good plus it's fast! Ingredients

    2 Cups Cauliflower

    .5 T Land o Lake Fat Free Half and Half
    .5.T I Can't Believe It's Not Butter Spray

Directions

1. Put florets in microwave ; add 1 T broth or salted water and cover.
2. Microwave on high for 3 1/2 minutes.
3. Mash or puree and add other ingredients according to taste and consistency desired.
