Marinaded Green Bean, Cauliflower & Garbanzo Beans

Introduction

This is a highly nutritious marinaded vegetable dish that is easy, good either hot or cold and goes well in a Easter dinner or a simple bar-b-que. Fresh vegetables make up the ingredients including: green beans, cauliflower, parsley, and celery. The canned items are garbanzo beans, Newman's Own Oil and Vinegar Dressing and marinated artichokes. If you desire you can make a complete meal out of it by adding seared tofu to the dish, heated with the vegetables as the last added ingredient. Ingredients

    2 cups greeen beans, snapped
    4 cups cauliflower, chopped bite-size
    1 cup parsely, chopped
    4- 8" stalks celery (1 cup)
    1- 10 oz. can of garbanzo beans
    1 sm. jar marinaded artichokes, with marinade
    16 oz. bottle Newman's Own Oil and Vinegar Dressing

Directions

1. Chop and clean green beans, cauliflower, parsley and celery.

2. Add 1/4 c. of the Newman's Oil and Vinegar Dressing to a Dutch oven and saute the celery, cauliflower and green beans stirring continuously until crispness remains; approximately 10 minutes.

3. Chop the artichokes and add its marinade, garbanzo beans, the remaining Newman's Dressing, and the finely chopped parsley.

4 Stir in the dressing and marinade and allow the ingredients to simmer on a low heat for 10 minutes.

Makes 8-12 servings from 1/2 to 3/4 c. each.
