Spinach & Feta Muffins

Introduction

These delicious savory muffins make a great side to scrambled eggs in the morning, or as a roll with salad or soup for lunch or dinner. These delicious savory muffins make a great side to scrambled eggs in the morning, or as a roll with salad or soup for lunch or dinner.
Number of Servings: 16

Ingredients

    1 cup plain white flour
    3/4 cup whole wheat flour
    2 tbsp superfine caster sugar
    4-1/2 tsp baking powder
    2 cups fresh chopped spinach
    100 grams / 4 oz feta cheese, crumbled
    1 egg or 1/4 cup egg beaters (nutrition figured with an egg)
    3/4 cup skim milk
    1/3 cup butter

Directions

Preheat oven to 375F/200C.

Mix together flour, sugar, and baking powder in a large bowl. Once thoroughly blended, add spinach and feta cheese.

In a separate bowl, blend egg, milk, and melted butter.

Add wet to dry ingredients. Fold until the mix is thoroughly wet, but do not overstir.

Grease a muffin pan, or place liners in cups. Spoon batter into the cups. It will not expand a great deal, so you'll want to mostly fill the cups.

Place in the oven and bake for 15-20 minutes until tops are golden brown and a toothpick comes out clean.

Makes about 16 muffins.
