Introduction

Number of Servings: 2

Ingredients

    1 Fresh Tomato
    1 red pepper
    1/4 C. chopped onion
    2 Cloves minced garlic
    1 TBSP olive oil
    1/4 C. Low Sodium Chicken Broth
    2 tsp Basil

Directions

Start with olive oil in pan over med-high heat. When hot, add garlic and basil (or whatever spice you are using). Cook until fragrant, do not allow garlic to brown. Add onion and about half the broth, cook until onions have started to soften. Add peppers, cook 3 min or so, add tomato. I take the seeds and juice out of the tomato before chopping and adding to the pan. Cook tomato a minute or so. If serving with leftover rice, add that at the same time as you add the tomato, with the rest of the broth.
