Introduction

Number of Servings: 4

Ingredients

    Olive Oil, 4 tbsp.
    Potatoes, 2, chopped into bite sized pieces.
    Onions, raw, 1 large, chopped.
    Garlic, 1 tsp, chopped.
    Paprika, 1 tbsp.
    Hot Chili Peppers, 1 pepper, chopped.
    Canned Tomatoes, 1 can.
    Brown Sugar, 1 tsp unpacked.
    Spinach, fresh, 2 cup.

Directions

This recipe makes 4 servings.

- Preheat oven to 220 degree (high)
- Put 2 tbsp of olive in a roasting tin and put in oven for 10 minutes
- Roast potato cubs until golden brown (around 30mins)
- Heat 2tbsp olive oil in a pot. Add onions and garlic. Cook for 5mins.
- Add paprika and hot chilli peppers. Stir.
- Add tomatoes, sugar and spinach.
- Simmer for 15mins.
- Stir in roasted potatoes.
- Season to taste

Enjoy! Typically a Spanish tapas dish but I usually have this as a side dish, served with chicken.
