Crispy Potato Skins

Ingredients

2 medium russet potatoes (you will be eating only 1/8" inch of flesh, attached to the skin)
Butter flavored cooking spray (I used PAM's Butter- Flavored spray with 0 calories and nutrients when entering ingredients)
1 TBSP fresh rosemary, minced
1/8 tsp freshly ground black pepper
Directions
2 servings of 1 set of potato skins per person
1. Preheat the oven to 375.
2. Wash the potatoes and pierce with a fork. Place in the oven and bake until the skins are crisp, about 1 hour.
3. Carefully, as the potatoes will be very hot, cut the potatoes in half and scoop out the pulp, leaving about 1/8" on the potato flesh attached to the skin. Save the pulp for another use.
4. Spray the inside of each potato skin with butter-flavored cooking spray. Press in the rosemary and pepper. Return the skins to the oven for 5 to 10 minutes.
5. Serve immediately.
NOTE: I AM able to confirm the calorie count. However, I was unable to isolate nutritional information for potato skins only--so couldn't enter that when adding the potato skins (rather than potatoes) as an ingredient.
I have emailed a good source for that information and will update the info for 'a food not listed' on sparkpeople's calculation area when I get the facts.
