An attempt at lightening up one of our family's favorite dessert recipes - a beloved coffee cake originally called Double Toffee Delight that I always called Grandma Ruby Cake because my Grandma Ruby made it. Number of Servings: 12

Ingredients

    1 cup brown sugar, packed
    2t ground cinnamon
    2c flour
    3/4c sugar
    2t baking powder
    1t morton's light salt
    1 packet instant sugar free vanilla pudding
    1 packet instant sugar free butterscotch pudding
    1c water
    6T canola oil
    6T unsweetened applesauce
    1t vanilla
    4 eggs

Directions

Preheat oven to 350.

Combine brown sugar and cinnamon in a small bowl and set aside.

Combine all remaining ingredients and beat at medium speed for 2 minutes.

Pour 1/3 of batter in 9x13 sprayed baking dish. Add 1/3 of brown sugar mixture. Next, pour the remaining batter on. Top with the remaining brown sugar mixture. Bake 40-45 minutes or until toothpick comes out mostly clean
