Big Batch Tomato Pasta Sauce

Introduction

I freeze this in 1 cup containers. Use them for pasta meals, meatball subs (turkey meatballs), Chicken Parmesan, etc. I freeze this in 1 cup containers. Use them for pasta meals, meatball subs (turkey meatballs), Chicken Parmesan, etc.
Number of Servings: 24

Ingredients

    1 Lb. Baby Carrots (cooked and mashed)
    1/2 Cup Extra Virgin Olive Oil
    1 bunch Celery heart (8 oz) finely diced
    3 Cups diced Onion
    1 Cup finely diced Garlic (about 4 "heads"?)
    24 Oz (Lrg) pack Mushrooms finely diced
    3 29 oz cans Tomato Puree (no salt)
    1 Tbsp black Pepper (add red pepper if desired)
    1 Tbsp Basil (dry)

Directions

Cook 1 Lb of baby carrots and mash before adding.

Saute celery, mushrooms, onions, garlic (all finely diced) in olive oil. Add to tomato puree in BIG pot. Add Pepper and Basil

Simmer on low for 3 or 4 hrs.

When I have this 2 times per week, it lasts me 3 months.
