Stuffed Red Peppers

Introduction

Veggie sausage adds flavor without so much fat. Veggie sausage adds flavor without so much fat.
Number of Servings: 4

Ingredients

    2 sweet Red Peppers
    2 cups cooked brown/mixed grain rice
    4 Morningstar sausage patties, cooked and crumbled
    2 cups chopped Kale, or 3 large leaves
    1/2 cup white wine
    salt and pepper to taste
    a few drops of Tabasco sauce if you like it spicy

Directions

Cut peppers in half, scoop out seeds. Combine the remaining ingredients, fill pepper halves. Place in deep baking dish, cover with foil. Put some extra wine or water in bottom of pan. Roast in 350 oven for 2 hours.
