Coconut Chai Cake with Flax and Walnuts

Ingredients

    1 cup strong chai tea (I use about 4 bags Yogi Chai Rooibos)
    1/3 cup uncooked quick (not instant) oats
    1 cup whole wheat flour
    1/2 cup white unbleached flour
    1 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    1/4 tsp ginger
    (or substitute cinnamon and ginger with 1 1/4 tsp pumpkin pie spice)
    1/2 cup granulated sugar
    1/4 cup ground flax
    1/3 cup unsweetened applesauce
    1 tbsp vinegar
    1/2 tsp almond extract
    1 tsp vanilla extract
    1/2 cup sweetened flaked coconut, 2 tbsp reserved
    1/4 cup chopped walnuts

Directions

Prepare chai ahead of time. Pour about 1 1/4 cups boiling water into a heat-proof cup and let the tea bags steep until water is cool. When you remove the tea bags, the water level should drop down to 1 cup. If it drops more, squeeze the tea bags to get the extra water out.

Preheat oven to 350. Grease a 9- or 8-inch square baking pan.

Combine all dry ingredients from quick oats through flax in a medium bowl. Stir in wet ingredients from chai through extracts. Mix well. Stir in coconut flakes and chopped walnuts. Pour into greased baking pan and sprinkle with reserved coconut. Bake 20 minutes or until toothpick inserted in the middle comes out clean.
