Hanne's Scalloped Potatoes

Number of Servings: 6

Ingredients

    6 small potatoes (about 600 g altogether)
    3/4 of a large onion sliced thin
    1/3 cup fat free mayonnaise or salad dressing
    1 cup skim milk
    2 Tbsp flour
    1 cup grated light cheddar

    Depending what kind of dish you use, you might have to grease the bottom a little. I used a glass dish and did not need to grease it.

Directions

Boil potatoes whole. Peel and slice. (Note the prep time includes the time for boiling potatoes)
Combine milk, mayonnaise and flour in a medium sauce pan and stir until smooth. Cook on medium heat until thickened, stirring a few times. Take off heat and add the cheese; stir until melted.
Pour 1/3 - 1/2 of the sauce in the bottom of a 9x9 baking dish. Layer potatoes, onions, potatoes. Pour the rest of the sauce over top.
Cover and bake at 325 F for 20 minutes. Remove cover and bake for 10 more minutes or until top is slightly browned.
This is great with ham.
