Ingredients

    2 medium tomatoes chopped
    1 yellow pepper, seeded and sliced
    1/2 cucumber sliced
    1/2 small red onion thinly sliced
    1 tbs capers, rinsed
    1/4 cup red wine vinegar
    1/2 cup extra virgin olive oil
    salt and pepper
    2 cups seasoned croutons

Directions

In a large bowl, combine first 5 ingredients. In a small bowl, whisk together vinegar, oil, and salt and pepper to taste. Pour over the vegetables. Spread croutons in a layer in a large bowl. Spoon vegetables over croutons and pour any remaning liquid over all of it.
