Roasted Red Pepper Hummus

Introduction

This is a very easy, healthy, vegetarian meal. This recipe requires less tahini than usual, so if you want more of that sesame bite common to hummus, feel free to add more tahini. Ingredients

    1 15 oz. can chickpeas (garbanzo beans), drained and rinsed
    1 large red bell pepper, roasted, seeded, peeled and diced
    2 cloves garlic, minced
    2 Tbsp. tahini
    2 Tbsp. extra virgin olive oil
    1 Tbsp. dried basil
    Juice from 1 Lemon

Directions

Add all ingredients, except olive oil, into a food processor. Set to low and stream in the olive oil to the mixture. Scrape the sides of the food processor at least once and continue to blend until smooth and creamy. Serve with pita wedges, toast, or crackers.
