No knead bread


No kneading, no fuss, delicious! No kneading, no fuss, delicious!
Number of Servings: 14


    3 cups bread or all purpose unbleached flour
    1/4 teaspoon instant yeast (any kind)
    1 1/2 teaspoons salt
    2 1/2 cups water


Mix flour, yeast and salt. Stir in water until blended. Dough will look "rough". Cover with saran wrap and let set at room temp for 18 -24 hours, until bubbly on top. Turn out on a cotton towel (not terrycloth) dusted with flour. Let rise again for about 2 hours. During last 25 minutes of second rising, put baking pan in oven at 450 degrees F to preheat. When ready to bake, turn out dough (gently, as not to deflate) into hot pan and cover with a lid. Bake at 450 for 30 minutes, remove lid and bake until brown on top, about 10 or 15 minutes.

Pan recommendations: Cast iron skillet with a lid, heavy ceramic roaster with a lid or dutch oven with lid.
I would not use any non-stick or glass. I usually use my cast iron chicken fryer (a large deep skillet with lid) or my Pampered Chef ceramic baker.
Despite having only 4 ingredients, no oil or egg, this bread is delicious! I slice and freeze it and it does fine.
