Erna's Turkey Lentil Soup

Introduction

Sweet, sweet leftovers!! Swapping lentils in for some of the rice in a regular recipe makes this a protein power house. The added fibre doesn't hurt either. I actually used home-made turkey stock but the nutritional info wasn't available. Sweet, sweet leftovers!! Ingredients

    1 medium onion, chopped
    2 medium carrots, chopped into bite sized peices
    2 celery stalks, chopped into bite sized peices
    1 shallot, diced
    2 tsp. butter
    1/2 cup rice
    1/2 cup brown lentils
    2 cups leftover turkey, mostly white meat
    salt, pepper, sage, & thyme

Directions

Saute vegetables in butter (or evoo ~ the flavour of the butter makes it taste like home) until just softening. Add the rice and lentils, saute for 1 minute more. Add the stock and turkey with spices. Bring to a boil, turn down the heat and simmer for 30 minutes until the rice and lentils are cooked.
