Jo-B's Pork Chops

Ingredients

1 tsp extra virgin olive oil
4 lean boneless pork chops, fat trimmed (about 4 oz each)
4 cups whole wheat egg noodles, uncooked
1/4 cup dry sherry or apple juice
2 tbsp packed brown sugar
2 tbsp low sodium soy sauce
1/4 tsp crushed red pepper flakes
2 tsp flour
2 tbsp water
Directions
Prepare sauce, in a small bowl: Combine sherry, sugar, soy sauce and red pepper. Set aside.
Cook noodles according to package directions.
In a large nonstick frypan, heat oil over medium-high heat. Add chops; cook until browned about 2 minutes per side.
Pour sauce over chops. Reduce heat to low; cover and simmer until cooked through about 10-15 minutes. add a little water, if needed, to keep sauce from cooking down too much.
Remove pork chops and cover to keep warm. In a small bowl combine flour and water; stir into sauce in frypan. Cook over medium heat until thickened, about 1-2 minutes. Pour sauce over chops. Serve with noodles. I pour a little sauce on noodles as well.
