No Salt, Low Fat Beef Goulash

Introduction

The original of this is in a cookbooks called No Salt No Sugar No Fat. I've changed it a bit - using lowfat sour cream instead of nonfat improves the taste greatly! Ingredients

    1 lb lean cubed beef (look for beef that's already cubed; it saves prep time!)
    1 large onion, sliced
    1/2 cup red wine
    2 tsp. (or more, to taste) sweet Hungarian paprika
    1 tbsp. No Salt Added tomato paste (Hunts is one brand that makes an NSA version)
    1 cup sliced mushrooms
    8 oz. uncooked "No Yolks" curly egg noodles
    1 cup low-fat/reduced fat sour cream

Directions

Brown meat in a large nonstick Dutch oven or stew pot - you can use a couple of drops of oil, or a couple tablespoons of water, to help it brown. Then add to the pan the sliced onion, red wine, paprika, and tomato paste; simmer, covered, for 1.5 hours. Add mushrooms and simmer 20 minutes more. While that last 20 minutes is happening, in a separate pan, cook noodles according to package directions. Remove meat mixture from heat, and stir in the sour cream. Drain the noodles. Serve the goulash over the noodles.
