Whole Wheat bread, 3slices
Poultry seasoning, 2 tbsp
Parmesan Cheese, grated, 2 tbsp
Thyme, ground, 0.5 tsp
*Whole Wheat Flour, 0.5 cup
Egg substitute, liquid (Egg Beaters), 0.34 cup
Chicken Breast, no skin, 3 lbs, approx. 3 lg breats
Put bread in a food processor and turn into crumbs. Transfer crumbs to a bowl, add in 1 tbsp poultry seasoning, thyme, and parmesan.
Mix flour and remaing poultry seasoning in another bowl.
Pour egg substitute into a third bowl. Cut chicken breats into 6 halves, roll in flour then dip in egg, then roll in bread crumb mixture. Put on pan. Repeat with reaming breasts.
Spray chicken pieces lightly with cooking apray and put in oven for 40 minutes.
Makes 6 servings.
