3 large tomatoes
4 celery stalks with leaves
3 red or green bell peppers
1 bunch crispy spring onions
1 clove garlic
Herbs of your choice, such as basil, parsley or coriander
Pepper, to taste
2 salt-reduced chicken or vegetable stock cubes
2 x 400g cans diced/crushed tomatoes
1 x 400g can of Four Bean Mix
2. Place vegetables in a large pot and add herbs and pepper to taste.
3. Dissolve stock cubes in a litre of water and pour over vegs. Bring to the boil, then simmer for 20 minutes, or until vegs are tender. Add diced/crushed tomatoes and beans. Stir. Continue to simmer.
4. Add more water and herbs and spices as needed. Serve.
Makes 9 1-cup servings.
