Lean Green Frittata

Introduction

A tasty blend of squash, mushrooms, spinach and cheese added to the healthy goodness of eggs and the delicate flavor of chicken broth. A tasty blend of squash, mushrooms, spinach and cheese added to the healthy goodness of eggs and the delicate flavor of chicken broth.
Number of Servings: 4

Ingredients

    4 eggs
    1 pkg (10 oz) frozen spinach, thawed and drained
    1 baby zucchini, diced
    1 c chicken broth
    6 oz part skim mozzarella, shredded
    1 can green chile peppers
    1 c canned mushrooms
    salt & pepper to taste
    1/2 t rosemary OR cumin NOT BOTH

Directions

Preheat oven to 350 degrees F.

Combine all ingredients in a large bowl and mix well. Pour into a 9" pie pan.

Bake 45 minutes or until a toothpick in the center comes out clean. Let cool at least fifteen minutes before cutting.

Serve warm or at room temperature for best taste.

Makes 4 servings. Excellent served with a side salad of mixed greens and a light vinaigrette.
