Nutty Barley Bake

Introduction

A great alternative to rice! This dish has a nutty, healthy texture and the flavor is actually better in the leftovers! A great alternative to rice! This dish has a nutty, healthy texture and the flavor is actually better in the leftovers!
Number of Servings: 8

Ingredients

    1 medium onion, chopped
    1 cup barley, raw
    1/2 cup slivered almonds (or pine nuts)
    1/4 cup butter
    1/2 cup parsley
    1/4 cup green onions
    2 cups beef broth

Directions

Brown onion, barley and almonds or pine nuts in butter until barley turns golden. Mix with parsley, green onions and beef broth and put into a casserole dish. Bake uncovered for 1 hour and 10 minutes at 350 or until all moixture is absorbed.

Makes 8 servings at 1/2 cup each.
