Hotel Room Spaghetti Sauce with Meatballs

I use as LITTLE canned products as possible, and add NO SALT to my meals - we're watching hubby's high b/p - so YOU may opt to add salt, but all my meals are perfectly tasty once you break that sodium addiction. Number of Servings: 3
Ingredients
3 cups chopped/cubed roma tomatoes
1 medium sized zucchini (about 1-1/4 cups chopped)
3/4 cup chopped white onion
half green pepper (about 1/2 cup, chopped)
1 small can tomato paste (about 12 Tbsp. or 1/2 cup)
1/2 pound 93% lean ground turkey
1/2 pound 93% lean ground beef
1 tsp dry italian seasoning
1/4 tsp black pepper
1 tsp minced garlic
1/8 tsp ground marjoram
1/8 tsp ground cumin
1 cup burgundy wine
Directions
Use non-stick spray in crock-pot and begin to cook fresh tomatoes on high for about an hour. You can opt to "mash" them slightly at this point, or leave them with a bit of shape to them (I mashed them up today!)
Add remaining veggies and 1 small can tomato paste (NOT flavored paste) and cook another hour on high.
Mix together meats and spices - roll into desired meatball sizes (mine came out to 21 meatballs). Spray electric skillet with non-stick spray and brown meatballs on all sides.
Add meatballs to veggies in crock-pot. Stir gently and let simmer on low for 4 hours, adding additional spices as desired. (I LOVE garlic, so I put like 2 Tablespoons more in my sauce.)
Stir in 1 cup burgundy wine and simmer on low/warm an additional hour. (CAN be omitted, but will lack some flavor - it will NOT make you "drunk" as the alcohol cooks off in the heat)
Serving size = 7 meatballs plus sauce.
GREAT with Whole Wheat pasta or even over brown rice!
