Mojo Pork Tenderloin

Ingredients

    2 12-16 oz. pork tenderloins
    4 canned chipotle peppers in adobo
    1/2 c. orange juice
    1/4 c. coarsely chopped onion
    2 tsp. oregano
    2 tbsp. lime juice
    1 tbsp. honey
    1 tbsp. cooking oil
    1/2 tsp. salt
    3 cloves garlic, minced

Directions

Trim fat from meat and place in a plastic bag.

For marinade - in food processor or blender combine: chipotles and sauce, orange juice, onion, oregano, lime juice, honey, oil, salt, and garlic. Cover and blend until nearly smooth. Pour over meat, seal bag, and refrigerate for 2 hours. DO NOT MARINATE LONGER OR CITRUS WILL MAKE MEAT MUSHY, Drain meat and discard marinade.

Cover and grill over medium heat 40-50 minutes. Let stand 5-10 minutes. Could also put in oven at 450 for 30-40 min. Need a meat thermometer to check.
