Ingredients

1 cup TVP, reconstituted in 1 cup hot water
1 clove garlic, minced
1/2 large yellow onion, diced
3 large tomatoes, divided
1 T. chili powder
1 t. cumin
1 t. smoked paprika
1 t. salt
1 T. Bragg's Liquid Aminos
1 12oz can garbanzo beans, drained
Directions
Put reconstituted TVP, garlic and onion in a large pot. Cook over low heat until onion and garlic begin to soften.
Meanwhile, blend two tomatoes in a blender or food processor until completely pureed.
Add spices to TVP mixture. Continue cooking for 2 minutes or until aromatic. Add pureed tomatoes and 1/2 cup water. Continue cooking for 2 to 3 minutes or while beans are prepared.
Drain and rinse garbanzo beans. Place in a blender or food processor and puree. It may be necessary to add a little water to reach desired consistency. Add to soup along with an additional 1/2 cup water and remaining tomato, diced. Cook until heated through, adding more of the spices if necessary.
Serve immediately. Add 2 to 3 crushed tortilla chips for garnish, if desired.
