Ingredients

    4 Chicken Breasts-mine is based on 8 oz a piece
    2 (15-oz.) cans black beans-I drained and rinsed these, so I added a cup of water to make sure the rice had enough liquid
    2 (15-oz.) cans Mexican stewed tomatoes
    1 cup salsa
    4-oz. can chopped green chilies
    14.5-oz. can tomato sauce

    I added a tbs of garlic and about 1 3/4 cup of brown rice. I also added a can of corn (drained and rinsed) right before serving.

Directions

Spray crockpot with non-stick spray (I use a crockpot liner instead).
Place chicken breasts in the bottom of the crock-can be frozen still (I stuck mine in the fridge the night before, so in the morning they were probably partially or slightly thawed).
Add remaining ingredients on top (I mixed all ingredients-except corn, rice and chicken-in a bowl to mix the ingredients together well. Then I placed the rice in over the chicken and then poured the mixed ingredients over top of that).
Cook for 8-9 hours on LOW or 4-5 hours on HIGH. (Mix in corn towards the end, I will do right before serving).
Can sprinkle part skim mozzarella cheese on top-not included in calorie count.
