Introduction

My mom's meatloaf always called for 1lb of ground beef, 1 egg, 1 sleeve of saltines, and 1 can of cream of mushroom soup... delicious, but not exactly healthy! This recipe is my healthy take on "Mom's Meatloaf". Ingredients

    1lb of ground chicken or turkey
    1/2C chopped onion
    1/2C shredded carrot
    1tsp low sodium Worchestershire sauce
    1C cooked quinoa
    1 large egg
    1 can of Campbell's Healthy Request Cream of Mushroom soup

Directions

Combine, meat, onion, carrot, worchestershire sauce, quinoa, egg, and salt and pepper (to taste) in a bowl, mix well. Spoon into 8 non-stick muffin or mini-loaf pans. Spoon mushroom soup over each and bake 20-25 minutes at 450 degrees.

Eat alone or on a piece of whole wheat bread or whole wheat bagel for some added fiber.

  • I added a tsp of thyme, but otherwise followed the recipe. They are delicious and freeze well. Next time I might even add cranberries for a little sweetness. - 11/18/11
