IntroductionSpicy chili without the kick of the beans! Spicy chili without the kick of the beans!
4-14 oz. cans whole tomatoes, no salt added
1 lb. 93% lean ground beef
1 large onion
6 tsp chili powder
3 tsp ground cumin seed
2 tsp cayenne or red pepper
1/2 tbsp olive oil
1/2 tsp salt (optional--lite salt would further reduce sodium)
In a large sauce pan, heat olive oil and add onion and cook until translucent.
Add tomatoes and juice, crushing them with your hands.
Add cooked ground beef and stir.
Add the spices to taste. If you like it spicier, add more. If you like it less spicy, add less.
Simmer on low heat for at least an hour. The longer it simmers the spicier it will be.
Leftovers will increase in spiciness.
You can add cheese and eat with tortillas depending on preferences.
Serves about 6.
