Overnight Eggs
Submitted by: EVERYTHINGMAMAIntroduction
These are so yummy and comforting. We've begun to eat them for dinner at times. You make them the night before (if you want them for breakfast) or you can make them at breakfast if you want to eat them for dinner. These are so yummy and comforting. Ingredients
-
1 pkg. bacon, cooked, crumbled
12 eggs beaten
1/2 cup 2% milk
1/2 tsp. salt
1/4 tsp. pepper
8 oz. reduced fat sour cream
1 cup sharp cheddar cheese, shredded
Directions
Prepare the bacon and crumble.
Beat eggs and add milk, salt, and pepper. Scramble low and slow. You want to keep the eggs moist, so just cook until set.
Let cool slightly. Then stir in sour cream.
Spoon into sprayed 9x13 baking pan. Sprinkle cheese and bacon on top. Refrigerate overnight.
Preheat oven to 350 and cook 15-20 minutes until heated through and cheese melted.
Makes 7 - 1/2 cup servings with a little leftover.
