Mexican Mess

Introduction

There isn't really a good name for this dish. it's not really a casserole, or a lasagna; so i'm going with "Mess." I make it with whatever leftovers I have from other mexican meals. There isn't really a good name for this dish. it's not really a casserole, or a lasagna; so i'm going with "Mess." I make it with whatever leftovers I have from other mexican meals.
Number of Servings: 6

Ingredients

    6 Corn Tortillas
    ~1-2 cups chicken
    1 can refried beans
    ~ 1/4 cup corn and black beans (i often mix these two veggies together in one container)
    Salsa
    Enchilada Sauce
    ~ 2 cups cheese

Directions

Pour a little enchilada sauce on the bottom of a 1.5 or 2 quart dish. Layer with two corn tortillas, in the middle, filing in the side spaces with a corn tortilla ripped in half. Layer refried beans, corn/black beans, and chicken. Top with dots of salsa (not too much, just a little) and a few splashes of enchilada sauce, and then with cheese. Repeat this layer one more time; then top it all with 3 more corn tortillas, layered with enchilada sauce, and finally cheese.
