Vegan Cashew Ranch Sauce

Introduction

I love Ranch but I hate all the added fat that goes with it. This creamy version of Ranch dressing contains healthy fats from the cashews. Today I will be drizzling it over some sliced vegetables and kidney beans for lunch. I love Ranch but I hate all the added fat that goes with it. Ingredients

    1/3 cup cashews, soaked in hot water for at least 30 minutes and drained
    1 T. nutritional yeast
    1 t. apple cider vinegar
    1 to 2 t. dried dill weed
    1/4 cup soy milk
    Real Salt, if desired

Directions

Place all ingredients in a blender and process until smooth. It may be necessary to stop the blender partway through to scrape the sides.
