Found this recipe in "Country Italian" cookbook. Feel free to use whichever veggies you like. The recipe simply calls for 4 cups assorted veggies plus tomatoes so I used what I like. I did find it a little bland, may want to cook pasta in chicken broth or add substitute a little chicken broth for some of the milk. Found this recipe in "Country Italian" cookbook. Ingredients

1 can (10 3/4 oz) low fat cream of chicken soup
1/3 cup skim milk
2 cloves garlic, minced
Salt and pepper, to taste
1/2 tsp Italian seasoning
Cooking spray
1 cup red pepper, sliced
1/2 cup green pepper, sliced
1/2 cup onion, chopped
1 cup carrots, cut into strips
1 cup broccoli florets
1 cup tomatoes, coarsely chopped
4 servings hot cooked whole wheat fettuccine
Directions
Combine soup, milk, salt and Italian seasoning in a small bowl; set aside.
Spray a large nonstick frypan with cooking spray. Saute onion and carrots about 5 minutes. Add peppers, onion, and broccoli and saute another 5 minutes.
Add soup mixture and simmer 3-4 minutes. Add tomatoes and mix well. Add salt and pepper, if desired.
Serve over hot pasta.
