Veggie Frittata

Introduction

A good way to use vegetables and still get some protein too! A good way to use vegetables and still get some protein too!
Number of Servings: 8

Ingredients

    1 Tbsp - Extra Virgin Olive Oil
    5 Eggs
    1 1/2 Tbsp - Butter
    1 - Large Zucchini
    1/2 - Red Bell Pepper
    15 - Mushrooms
    1/2 - Red Onion
    1 bunch - Broccoli

Directions

preheat oven to 350
spread butter onto 2 quart glass baking dish
dice all veggies into small pieces
heat 1 tbsp olive oil in large skillet
add all veggies at once
add garlic salt and black pepper
sautee until softened
transfer veggie mixture into baking dish and add half the cheese
beat eggs in separate bowl
add eggs to mixture
top with rest of cheese
bake 25 minutes or until eggs are set
