Got this recipe from Health Cooking magazine. I didn't make it EXACTLY as directed, but the info for the recipe is below. I made notes of the substitutions I used and the recipe info is based on how I made it. Recipe calls for 6 servings, I made it into 4 servings. Got this recipe from Health Cooking magazine. Ingredients
-
4 garlic cloves, sliced (I used minced from a jar, 1.5 T)
2 tablespoons Crisco® Light Olive Oil or Canola Oil (I used cooking spray instead)
2 large onions, chopped
1 pound fresh baby spinach (I had a 9oz. bag)
1 can (15 ounces) white kidney or cannellini beans, rinsed and drained (I used 1 cup dry great northern white beans and cooked them according to package instructions)
1/2 cup white wine or reduced-sodium chicken broth (I used a chicken bullion cube)
3/4 teaspoon salt (didn't use because used salty bullion)
1/4 teaspoon pepper
Directions
In a large nonstick skillet, saute garlic in oil (didn't use oil)until tender. Remove garlic and discard. Add onions to pan; saute until crisp-tender. (I cooked onions and garlic together)
Stir in the remaining ingredients. Cook and stir over medium heat for 10-12 minutes or until spinach is wilted. Serve with a slotted spoon.
