Light Lemon Sauce

Light Lemon Sauce

Introduction

Vegetables are delicious on their own, but this light lemon sauce is a great addition to roasted
or steamed vegetables. I love it over Roasted Asparagus (page 318). Use this in place of Hollandaise
sauce in any recipe. It has all of the tang with much less fat. If you prefer a spicier sauce, add white
pepper to taste.

Directions

1. Combine the cottage cheese, sour cream,
and milk in a food processor and pulse to a
puree. (You can also use an immersion blender:
just place the ingredients in a large mixing
bowl.)
2. Add the lemon zest and whisk to combine,
then stream in the lemon juice, whisking continuously,
until the mixture is pourable. (You might
not need all the lemon juice.) Serve immediately
or store in the refrigerator for up to 2 days.
