Orzo Salad

Ingredients

    8 oz Orzo Pasta, uncooked
    1 cup cherry or grape tomatoes, halved
    2 tbsp fresh choped basil
    1/2 cup feta cheese, crumbled
    1/4 cup pine nuts, toasted
    1/4 cup finely chopped red onion
    1/4 cup extra virgin olive oil
    3 Tbsp white balasamic vinegar or champagne vinegar
    salt and pepper to taste

Directions

Preheat oven to 400 degrees. Cook orzo according to package directions. Drain and set aside. While pasta cooks place tomatoes in a shallow baking dish and spray with olive oil flavored non stick cooking spray. Roast tomatoes in preheated oven for approx 10 minutes, just until they split. In a large bowl mix red onion and basil with the vinegar. Let sit for about 5 minutes. Add pasta and tomatoes while still warm, and drizzle olive oil, mixing well to coat. Add pine nuts and crumbled feta and fold in. Salt and pepper to taste. This tastes best served slightly warm or at room temperature. Makes 8 servings.
