Introduction

This is a delicious and easy meal to use left over Easter ham and veggies. But you can make it anytime and substitute any of your favorite fresh veggies! It's great for any meal, breakfast, lunch or dinner. I like to make it for dinner and have some left over for lunch at work the next day. Ingredients

    5 large Eggs
    3 Egg whites
    2 cups fresh Spinach
    1 cup fresh Mushrooms, sliced
    1 cup fresh Asparagus, cut in 1/2 inch pieces
    1 Tbsp Pesto Sauce (homemade or store bought)
    1 cup diced Ham, extra lean
    1/4 cup fat free milk
    2 Tbls parmesan cheese, grated
    PAM, 1 serving

Directions

Preheat oven to 350 degrees.
Heat large skillet over high heat, spray lightly with Pam (or other cooking spray). Cook mushrooms and asparagus until just starting to soften, about 5 minutes. Add spinach and wilt, approx. 2-3 minutes. While vegetables are cooking, scramble eggs, egg whites and milk in a bowl. Whisk in pesto sauce. Spray pam in 11x8 glass baking dish. Spread ham and veggies in baking dish, pour egg mixture over ham and veggies. sprinkle parmesan cheese on top. Bake for 40 minutes. Enjoy!
