Taco & Black Bean Tortilla Pie

Introduction

Ingredients

    1 lb. lean ground turkey
    Packet of taco seasoning
    1 15 oz. can black beans (drained & rinsed)
    1 11 oz can yellow corn, drained
    1 cup salsa
    1 can fat-free refried beans
    4 oz (1 cup) shredded cheddar cheese
    1 tsp chili powder
    1/2 tsp cumin
    1/4 cup fresh cilantro (or 2 Tbsp. dried)
    1 garlic clove, minced
    7-8 corn tortillas

Directions

Heat oven to 350. Brown ground turkey; drain, add seasoning and water according to package directions. In medium bowl, combine rinsed and drained beans, corn, 1 cup salsa, 2/3 cup cheese, chili powder, cumin, cilantro and garlic. Place 2 tortillas in bottom and part way up sides of 9" pie plate. Tope with 1/2 can refried beans, half the meat and half the bean/corn mixture. Place 2 more torillas over filling to cover; spread remaining refried beans, meat and bean mixture on top. Top with remaining 3 tortillas; top with remaining cheese and cover loosely with foil. Bake for 30 - 40 minutes until hot through. Serves 6.
