Chinese Garlic Mushrooms

Introduction

An asian variation on the stuffed mushroom. This is such a good snack! If you don't like oyster sauce, just replace it with light soy sauce and recalculate the calories. Number of Servings: 4

Ingredients

    8 Large open cup mushrooms
    3 Scallions, sliced
    1 Garlic clove, crushed
    2 TBS Oyster sauce
    10 oz Package tofu, cut into small dice
    7 oz Can corn, drained
    2 tsp Sesame oil
    Salt and pepper, to taste

Directions

1. Preheat the oven to 400F. Finely chop the mushroom stalks and mix with the scallions, garlic, and oyster sauce.

2. Stir in the diced tofu and corn, season well with salt and pepper, then carefully spoon the filling into the mushrooms.

3. Brush the edges of the mushrooms with the ssesame oil. Arrange the stuffed mushrooms in a baking dish and bake for 12-15 minutes, until the mushrooms are just tender, then serve at once.

4 Servings, 2 mushrooms per person.
