Banana Muffins

Ingredients

1 c flour
1/4 c ground flax seed
1/4 wheat germ
1 tsp baking powder
1 tsp baking soda
1 egg - slightly beaten
1/3 c butter - melted
4 mashed med. ripe bananas
2 tbsp chopped dates
2 tbsp sunflower seeds
2 tbsp walnuts
Directions
Mash Bananas, Lightly beat egg. Melt butter - mix together in bowl
In another bowl, mix flour, flax seed, wheat germ, baking powder, baking soda
Mix both bowls together, add dates, sunflowes, and walnuts
Spoon into muffin tins (I use paper liners)...
Bake at 400 for 20 minutes or until pick comes out clean
Of course, you can omit the sunflower seeds, walnuts & dates for a lower fat and calorie count...but I keep them in for the protein and flavor...
Next time I am also going to try lower the butter (I don't use margarine) to see if that much is really needed...
