Chickenzas (Chicken - Pizza Cheese)

Introduction

I basically replaced the bread with chicken to make a main dish. It has a very familiar flare to a chicken parmesian; however, it isn't fried and bread comes no where near this dish. My son insisted on my calling them chickenzas. I basically replaced the bread with chicken to make a main dish. It has a very familiar flare to a chicken parmesian; however, it isn't fried and bread comes no where near this dish. My son insisted on my calling them chickenzas.
Number of Servings: 4

Ingredients

    NOTE: T = tablespoon and t = teaspoon

    4 Tyson chicken breasts (approx 4 oz each)
    1/4 cup (4T) Muir GLen Organic Italian Herb Pasta Sauce
    1/2 cup mozzarella cheese (low moisture, part skim)
    2 t Kraft reduced fat grated parmesian cheese
    1 t dried oregano
    1 t garlic powder

Directions

Preheat oven to 425' F

Pound the chicken down into fillets so they are about 1/4 inch thick. Place in a dish "bumpy" side up (the inside of the chicken up, not the side the skin WOULD have been on).

Spread 1 T of pasta sauce over each chicken breast. Sprinkle oregano and garlic powder over each.

Bake chicken uncovered for 15-20 minutes.

Remove from oven. Sprinkle the parm cheese and mozzarella cheese over each chicken breast (1/2 t of parmesian for each and 1/8 cup of mozz on each)

Return to oven and cook until the cheese is melted.

Makes 4 servings: 1 serving = 4 oz chicken (1 small breast)
