Introduction

Millet, fruit, seeds, and nuts for a warm, nutritious, and filling breakfast. Make the whole recipe, and store the leftovers in single serving containers for quick warm-up breakfasts all week. Ingredients

    1 C millet
    1 C unsweetened soy milk
    1 C water
    2 medium apples, diced
    2 C frozen blueberries
    1/2 C raisins
    1/2 C whole almonds
    1/2 C sunflower seeds

Directions

Makes 6 servings for breakfast all week.

Bring water and soy milk to a boil, and add dry millet. Reduce heat and cover for 20 minutes.

At 20 minutes, add diced apples, thawed blueberries, and raisins. Mix well, and cover again for 10 more minutes.

At 30 minutes, check to see if millet is cooked. It should not be crunchy at all. Add almonds and sunflower seeds, keeping them on the heat until warmed through but not cooked.

Serve some immediately, and store the rest for easy breakfasts.
