Ingredients

    # Carrots - Gerber Baby 2nd Foods, 1 serving
    # *Spinach - Fresh Exspress -Baby Spinach- 25Cal/2-Cups, .5 serving
    # *Baker's Bittersweet Chocolate (1/2 square, 1/2 oz), 3 oz
    # Brown Sugar, .5 cup, packed
    # Cocoa, dry powder, unsweetened, .25 cup
    # Promise, Light Margarine, tub, 1 Tbsp, 2 serving
    # Vanilla Extract, 2 tsp


    # Egg white, 2 serving


    # *ARROWHEAD MILLS Organic Whole Grain Oat Flour, .75 cup (or all purpose flour)
    # Baking Powder, .5 tsp
    # Salt, .5 tsp

Directions

This is a little tweak, faster version of Jessica Seinfeld's recipe for brownies.

Puree spinach (steam in microwave then bled in blender until smooth)

melt chocolate (double boiler or microwave)

combine first group of ingredients and mix until smooth. whisk egg whites a little then add to chocolate mixture.

add the last group of ingredients.

cook in a greased 8x8 pan for 35-40 minutes. Recipe is calculated using oat flour and for a yield of 9 brownies.

  • I thought these were pretty good but I am the first to admit I'm not that into chocolate. However my brownie loving husband didn't care for these. If you like dark choclate they might just meet your chocolate need :) - 4/11/10
