Stewed squash

    Onions, raw, 1 cup, sliced
    Garlic, 3 cloves, minced
    Zucchini, 2 cup, sliced
    Summer Squash, 2 cup, sliced
    Stewed Tomatoes, 1 cup
    Olive Oil, 1 tbsp
    Oregano, ground


In large saucepan saute onion, garlic, and oregano in olive oil. When onion is translucent add slices of zucchini and summer squash to pan. Add can of stewed tomatos. Lower heat to simmer, cover pot and cook for about 20 min. or until squash is fork tender. Add salt and pepper to taste.
